During the holiday season, I don’t do a ton of baking, but I do like to make gingerbread. Growing up, we didn’t actually do gingerbread. In fact, I only started baking it about 5 or 6 years ago, when my cousin posted the recipe (which you can find here with really nice photos). Intrigued at the idea of such a classic Christmas treat, I gave it a go. Now, it’s a staple for us this time of year. It has that perfect Christmasy-flavour, without being heavy. or too sweet.
Greener’s Favourite Gingerbread
4 oz (1 stick) unsalted butter
1 C sugar
2 eggs
3/4 C boiling water
3/4 C molasses
2 1/2 C flour
2 tsp baking soda
1/2 tsp salt
2 tsp ginger
dashes of allspice, cloves, and nutmeg
- Preheat your oven to 350 F.
- Butter and flour your loaf or baking pan (loaf pans take longer to bake).
- Cream butter and sugar, beat until light.
- Add eggs, and beat well.
- Add boiling water and molasses, and blend.
- In a separate bowl, mix flour, baking soda, salt, ginger, and any other additional spices. Add into the wet batter, and mix until well-combined.
- Transfer into pan, and bake for 45-60 minutes (for bread pan), or until a toothpick comes out clean.
- Cool 5-10 minutes, before turning out onto cooling rack.
This gingerbread is the perfect holiday dessert, especially if you’re looking for something that’s not too sweet after a large meal. It’s also delicious warmed slightly with butter. Since it’s so simple, it’s easy to get involved with the whole family.
