my favourite gingerbread recipe

During the holiday season, I don’t do a ton of baking, but I do like to make gingerbread. Growing up, we didn’t actually do gingerbread. In fact, I only started baking it about 5 or 6 years ago, when my cousin posted the recipe (which you can find here with really nice photos). Intrigued at the idea of such a classic Christmas treat, I gave it a go. Now, it’s a staple for us this time of year. It has that perfect Christmasy-flavour, without being heavy. or too sweet.


Greener’s Favourite Gingerbread

4 oz (1 stick) unsalted butter

1 C sugar

2 eggs

3/4 C boiling water

3/4 C molasses

2 1/2 C flour

2 tsp baking soda

1/2 tsp salt

2 tsp ginger

dashes of allspice, cloves, and nutmeg

  1. Preheat your oven to 350 F.
  2. Butter and flour your loaf or baking pan (loaf pans take longer to bake).
  3. Cream butter and sugar, beat until light.
  4. Add eggs, and beat well.
  5. Add boiling water and molasses, and blend.
  6. In a separate bowl, mix flour, baking soda, salt, ginger, and any other additional spices. Add into the wet batter, and mix until well-combined.
  7. Transfer into pan, and bake for 45-60 minutes (for bread pan), or until a toothpick comes out clean.
  8. Cool 5-10 minutes, before turning out onto cooling rack.

This gingerbread is the perfect holiday dessert, especially if you’re looking for something that’s not too sweet after a large meal. It’s also delicious warmed slightly with butter. Since it’s so simple, it’s easy to get involved with the whole family.
